The hotel group is replacing its Milan dining concept with shared plates and tableside trolley service.

Bulgari Hotels & Resorts is switching up the format of its Milan restaurant.
Opened Sept. 1, Da Niko replaces the previous dining concept at Bulgari Hotel Milano with a new one from chef Niko Romito, whose partnership with the group continues. The name translates roughly as “at Niko’s,” pitching the room as somewhere guests go to eat at someone’s home.
“Today, guests seek experiences that are more spontaneous, less bound by ritual, and able to restore the pleasure of sharing and discovery,” said Silvio Ursini, executive vice president of the Bulgari Group, in a statement.
“Da Niko responds to this desire without compromising anything that has made Niko Romito’s cuisine so distinctive.”
Built for sharing
The menu runs from raw dishes to preparations finished tableside. Crudi include amberjack carpaccio with lemon and chili and a langoustine cocktail, while starters rework Italian standards such as vitello tonnato and veal meatballs with green sauce.
Pasta covers Mr. Romito’s spaghetti al pomodoro and tonnarelli cacio e pepe alongside paccheri with langoustines and plin agnolotti with beef jus. Main courses arrive from a trolley, among them the catch of the day, Milanese veal cutlet and Piedmontese fried chicken.

ACPV Architects Antonio Citterio Patricia Viel redesigned the room around teak and terracotta tones, with mixed table sizes, armchairs and banquettes. A cocktail bar with an oval black resin counter anchors the space, set against a glass wall onto the hotel garden.
Six willow-framed mirrors by artist Emy Petrini line the walls, and a late-1920s Richard Ginori vase from Gio Ponti’s tenure sits at the center of the dining room. Tableware is an exclusive variation of the Ginori 1735 Diva collection.
“We worked with warm materials, such as teak, and reconfigured the proportions of the spaces to create a more intimate environment that naturally encourages connection, conversation, and conviviality,” said Patricia Viel, CEO of ACPV Architects, in a statement.
Bulgari Hotel Milano marked its 20th year in 2025, and the group is adding properties in Miami, Bodrum, the Maldives, Cave Cay and Abu Dhabi between 2026 and 2031 (see story).
